Tegelikult ei söönud ma antud salatit just täna lõunaks, vaid päris mitu päeva tagasi, kuid võiksin seda igal juhul nüüd uuesti teha. Mulle meeletult meeldivad igasugused värvilised toidud, mida on ühtaegu nii kergelt kui võrdlemisi kiiresti võimalik valmistada. Nüüd, mil kevad ka vaikselt õuele hakkab jõudma, on vähemalt minu kere andnud märku sellest, et võiks ka toidulaual mingeid muudatusi sisse viia. Kõik, mis on vähegi värske ning mahlane, ajab isutama ja see on niivõrd hea tunne. Ei jaksa ära oodata, mil saaks mõnusalt roosat ja mahlast arbuusi või magusaid maasikaid süüa!
Ilmselt pole antud postitus mingi eriline retseptiüllitis, kuid väikseks nipiks võib seda ikka lugeda. Antud salatisse on lisatud muidugi neid asju, mis mulle endale väga meeltmööda on. Oliivid annavad minu arvates mõnusat soolakust ning kurk värskust. Kuid komponente võib vastavalt enda maitseelistustele muidugi muuta. Antud kogustest peaks jaguma vähemalt ühele näljasele heaks kõhutäieks. :)
I actually did not have this for lunch today, but if I had the chance, I would for sure do it again now. I really love all kinds of colourful dishes that are easy to make and aren't utterly time-consuming. Now, when spring has at least in some ways finally hit the town, my body has got some cravings that let me know it is time to make some changes regarding my daily menu. Anything fresh and juicy simply calls my name. I honestly cannot wait until I can indulge in some yummy pink watermelon or sweet strawberries!
Although I cannot call this a proper recipe, I suppose one can take it as a little lunch tip anyway. I have added all these things that I usually fancy in my salads. For example I love the savory taste the olives and the freshness of the cucumber. But of course any of these can be altered according to your own taste preferences. The salad itself should be enough to feed at least one hungry one. :)
VAJA LÄHEB:
1 väiksem kanafilee tükk
3-4 päikesekuivatatud tomatit
Provansaali ürte
Näpuotsaga soola, pipart
1/4 kruusi kusskussi
1 küüslauguküüs
1 spl oliiviõli
1-2 spl värskelt pigistatud sidruni mahla
Pisike peotäis jääkapsast
1-2 oliivi
Pisut kurki
2-3 kirsstomatit
WHAT YOU NEED:
1 small chicken breast fillet
3-4 sundried tomatoes
Provence herbs
A pinch of salt, pepper,
1/4 cup/mug of couscous
1 garlic glove
1 tbsp olive oil
1-2 tbsp freshly squeezed lemon juice
A small handful of iceberg lettuce
1-2 olives
A bit of cucumber
2-3 cherry tomatoes
Esmalt võid keema panna vee ning kuumutada pannil pisut õli. Haki päikesekuivatatud tomatid peeneteks ribadeks ja aseta koos provansaali ürtide ning soola-pipraga maitsestatud kanafileega pannile. Päikesekuivatatud tomatitest eralduv mahl ning õli peaks kenasti koos ürtidega kanale kena karamellistunud jume andma. Mina hoian pannil kana küpsetades aeg-ajalt kaant pealt - nõnda jääb see palju mahlasem ja ei kuiva ära. Prae kana mõlemalt küljelt ning sega vahepeal ka tomateid, et viimased kõrbema ei kipuks. Tomatid võib mingil hetkel pannilt ära tõsta, kui tundub, et viimased liialt küpsema või panni külge kinni hakkavad jääma.
Seni, kuni kana küpseb, vala kusskuss kaussi ning vala peale nii palju keevat vett, et kusskuss oleks veega kaetud (mitte ei ujuks vees). Sega kusskuss kergelt kahvliga läbi ning aseta teine kauss või kaas peale ja lase sellel omakeskis paisuda (nii 10 minutit). Haki peeneks jääkapsas, kurk, oliivid ning kirsstomatid lõika pooleks või sektoriteks. Kokku võid segada ka küüslaugupressiga purustatud või väga peeneks hakitud küüslaugu, oliiviõli, sidrunimahla, soola ja pipra. Viimane vala kenasti suureks paisunud kusskussi sekka ning sega kõik ühtlaselt omavahel läbi. Sekka võid lisada ka jääkapsa, oliivid, kurgi ning tomati. Kui kana on valmis (väljajooksvad mahlad on selged), lase sel mõned minutid enne lahtilõikamist seista. Aseta koos päikesekuivatatud tomatidega salatile ja ongi valmis. Kes soovib, võib kergelt kreemjama ja soolakama konsistentsi jaoks veel pisut feta juustu peale puistata!
Firstly, put the water to boil and heat a bit of oil on the pan. Chop the sundried tomatoes into thin strips and season the chicken with provance herbs, a bit of salt and pepper. Put it all onto the pan and fry until the chicken has cooked well. The juices and oils of the tomatoes should give the chicken a nice caramelized look. Every now and then, I put the lid on the pan, that should keep the chicken moist and prevent it from drying up. Fry the chicken on both sides, turn it around several times and stir the tomatoes so they won't burn. You can take the tomatoes off the pan if they seem already too cooked or start to stick to the pan.
While the chicken is cooking, put the couscous into a bowl and pour the boiling water onto it. Just enough to cover the couscous. Stir it with a fork, put another bowl or a lid over it and let it expand for about 10 minutes. Finely chop the lettuce, olives, cucumber and cut the cherry tomatoes into half/sectors. Mix together the olive oil, garlic (pressed with a garlic press or very finely chopped), lemon juice, salt and pepper. Pour it over the couscous once it is ready and stir it evenly. You can add in also the lettuce, cucumber, olives and tomatoes. Mix it lightly. If the chicken is ready, let is rest for a couple of minutes before cutting it open into slices. Add it onto the salad together with the sundried tomatoes and that's it! If you want, you can add in some feta cheese to get a bit of a creamier or saltier consistency.
